Caraway seeds were so revered by sixth-century Persians that citizens used them to pay taxes.

Said to improve iron deficiency: brew a daily tea of caraway seeds (to improve iron absorption) with parsley (an iron-rich herb).

A staple of cooking for more than 5,000 years, Caraway adds flavor to eggs, cheese, creamy soups & sauces, cabbage, beets, spinach, potatoes, snap beans, peas, zucchini, pork & fish. To avoid bitterness, add crushed or whole seed only 15 minutes before serving.
