Quite different in taste and use from the seed of the same plant (coriander), Cilantro is the leaf which has gained great popularity as a flavoring in cilantro. For a spicy relish for poultry or lamb, combine 1/2 cup of dried coriander leaf with ½ cup dried mint, 2 cloves of garlic, juice of 1 lemon, a minced hot chili & a handful of blanched peanuts in a food processor. Add a bit of olive oil during the processing until smooth.
